Just put your turrets to the forward firing position (I believe you do this with "f", but experiement). Remember, though, that you don't get the full amount of turrets firing, only the ones which can.

Yes, I forgot about XWA alliance there for a sec. I actually hate TIEs, TIE Interceptors are pretty good, but thats because epsilon uses them. I would have to say that TIE Advanced is my favorite.
And also steel, you can just use ION cannons also.

Again, it is a "superweapon". The gun turrets have nothing to do it. The power remains constant and you have to aim it with your whole ship. You cannot knock an ISD within 1 min with all the turbolaser turrets of an ISD but you can do it with this "superweapon"

This "superweapon" has always the same combat power, wether you use a SSTD or an tiny Assault Transport. If a fighter crosses across it, it will be instantly veporised regardless if it is a TD, BW or whatever.
